em sent this recipe to the sissies awhile ago.
the one "chili" all her kids will eat and cater to their liking...
i have taken this to 2 families in the last week.
it appealed to me because it's:
a) easy and can cook all day long in a crockpot
b) versatile...a yummy base, but everyone gets what they want once you add the fixins
c) healthy (well, sans the cheese/fritos/sour cream)
d) tasty as all get-out. husband really doesn't love soup much.
but he didn't complain about leftovers on this baby...now that's sayin' something.
white bean chili
3-4 cooked, cubed chicken breasts (i just shredded a costco rotisserie chicken)
1 medium onion chopped and sauteed
5 cups chicken broth
1 cube chicken bouillon
2 cans white beans (northern)
1 teaspoon garlic powder
2-3 teaspoon cumin
2 teaspoon oregano
4 oz. can chopped green chilies
(i added some frozen corn, too, because i felt like it)
sour cream
cheese
simmer all for 2-3 hours (or put in crockpot on low all day), then 1/2 hour before,
add sour cream and cheese to your liking...
husband likes lots (like a big dollop). i like little (little dollop o' daisy)...
serve with cheese, fritos/corn chips, cilantro, green onions, avocado, salsa.
if i werent so boiling hot here in singy right now i'd love to snuggle up to a bowl of thatta chilli!
